Starting the New Year with Kroger's brand: Simple Truth

One of my most fond memories from studying abroad, during my undergrad, was having lunch at the Blackwell’s Bookstore Cafe on Broad Street in Oxford, England. I specifically remember sitting at a table by the window overlooking the ancient architecture with the focus of the Bodlelian library in the distance. I sat there studying Shakespeare and overhearing the couple next to me discuss their love life. Yet, most importantly, I was eating one of the cafe’s open-faced hard-boiled open-faced egg sandwiches along with vinegar kettle chips and a diet coke. For all of you all out there that have romantic images of Oxford University and its spires please know there are days now when I think about living abroad in this city and all I remember is an egg sandwich: at that table by the window.
Kroger is highlighting some of their specialty brand, Simple Truth, this next week with online coupons, and I had no other option than to share with you a few of my favorite recipes, including the sandwich mentioned above.

EGG RECIPES:
Poached Egg on Toast
Simple Truth (ST) Pan Bread: toasted with butter
Handful of baby arugula on ST bread
Warm poached egg boiled and placed on top
Viola—Enjoy!
Hard-Boiled Egg
Open face ST Pan Bread: toasted
Sliced hard-boiled egg: ST brand
Handful of baby arugula ST brand
Do not forget: sea salt and vinegar kettle chips & a diet coke, thank you very much.
Deviled Eggs
Take six eggs
Place the eggs in a saucepan 1 ½ in. of water above the eggs, boil, and cover.
Turn heat to low. Cook for 1 min.
Remove from heat cover for 14 min, and then rinse under cold water for 1 min.
Mix deviled ingredients: mix hard-boiled yolk (from 6 eggs), ¼ cup of mayo, 1 teasp. white vinegar, 1 teaspoon of yellow mustard, 1/8 teaspoon salt, fresh ground black pepper, and smoked Spanish paprika for garnish.
